Air-fryer Filo Crackers

SERVES 14
You will need:
1 large brown onion, coarsely grated
1 large zucchini, coarsely grated
2 tbs day-old wholemeal breadcrumbs
500g lean beef mince
1 tbs ground cumin
1/4 cup currants
1/2 bunch thyme, leaves picked
2 free range eggs, lightly beaten
14 sheets filo pastry
5ml extra virgin olive oil cooking spray
1/4 bunch continental parsley, leaves picked
1/4 cup tomato chutney, to serve
Method:
Using your hands, squeeze excess liquid from onion and zucchini. Place vegetables in a large bowl. Add breadcrumbs, mince, cumin, currants, thyme and half of the egg. Season with pepper and mix well to combine.
Place 1 filo sheet on a flat surface, then spray with oil. Fold in half crossways. Place ¼ cup beef mixture along shortside. Roll to enclose filling, then pinch and shape ends to form cracker shape. Place on a baking tray lined with baking paper. Repeat with remaining filo sheets, oil and beef mixture. Brush tops of filo crackers with remaining egg and sprinkle with remaining thyme.
Preheat air fryer to 180°C. Spray air-fryer basket with oil. Place 3 filo crackers, in a single layer, in basket. Cook for 8-10 minutes or until filling has cooked through and pastry is golden and crisp. Repeat with remaining filo crackers. Scatter over parsley and serve with chutney.
