Air-fryer Scones For Mothers Day!


Preparation time is 10minutes

Cook time is 30minutes

Serve is for 12 people


Ingredients

3 1/2 cups self-raising flour, plus extra for dusting

1 cup thickened cream

1 cup lemonade

5ml olive oil cooking spray

1/2 cup strawberry jam

1/2 cup double thick cream


Method

Step 1 of 3

Preheat air fryer to 170°C for 3 minutes. Place flour in a large bowl. Make a well in the centre. Add thickened cream and lemonade. Using a flat-bladed knife, stir until a sticky dough forms. Turn dough out onto a lightly floured surface and knead until just smooth (don’t over-knead).

Flatten dough until 2.5cm-thick. Using a 6cm-round cutter, cut out scones. Press leftover dough together and repeat to make a total of 12 scones.

Step 3 of 3

Pull out air-fryer pan and basket, then spray basket with oil. Place 6 scones, side by side, in basket. Slide pan and basket into air fryer. Set timer for 15 minutes and cook until light golden and hollow when tapped on top. Repeat with remaining scones. Serve with jam and cream.
