BEET WALNUT SALAD




INGREDIENTS

For the Dressing 

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons extra virgin olive oil 

  • 1 tablespoon dijon mustard

  • 2 tablespoons maple syrup

  • 1/2 teaspoon sea salt

  • 1/2 tsp black pepper

  • 2 cloves garlic, grated


For the Salad (per serving)

  • 2 handfuls of mixed salad greens, arugula or baby spinach

  • 1/2 cup peeled and grated carrot

  • 1/2 cup peeled and grated beet (1 small beet)

  • 1/2 cup red cabbage, very finely chopped (use a mandolin if you have one)

  • 3 tbsp walnut pieces or chopped walnuts

  • 3 tbsp raisins or cranberries

  • 1/4 cup fresh blueberries
