Brie & Cranberry Bites



Makes 25


You will need:

5ml extra virgin olive oil cooking spray

1 1/2 sheets Woolworths frozen puff pastry, partially thawed

1/2 cup Woolworths cranberry sauce

200g wheel Thomas Dux Triple Cream Brie

4 large thyme sprigs, small sprigs picked


Method

Preheat oven to 200°C/180°C fan-forced. Spray a 2 x 12-hole (1½-tablespoon-capacity) mini muffin pan with oil.

Cut 1 pastry sheet evenly into 16 squares and half sheet evenly into 8 squares. Line each prepared pan hole with a square of pastry, folding in edges to form a round.

Cut brie into 24 3cm pieces. Place 1 tsp cranberry sauce and 1 brie piece in each lined hole. Bake for 15-20 minutes or until puffed and golden. Set aside for 2 minutes to cool before transferring to a serving board. Season with freshly ground cracked pepper and top with thyme.
