Chicken Quesadilla Traybake

Ingredients
5ml olive oil cooking spray
1 small red capsicum, deseeded, finely chopped
1 red onion, finely chopped
250g chicken mince (see Tip)
1 tbs smoked paprika
4 tomatoes, finely chopped
4 soft wholegrain wraps
1/2 cup shredded mozzarella
1/2 lemon, juiced
1 cup baby spinach leaves (to serve)
Method
Step 1 Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
Step 2 Lightly spray a large non-stick frying pan with oil, then place over medium heat. Add capsicum and half of the onion, then cook, stirring, for 5 minutes or until softened. Add chicken and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add paprika and half of the tomato, then cook for 5 minutes or until tomato has softened slightly.
Step 3 Place wraps on tray, overlapping slightly to form a large square. Spoon chicken mixture into centre of square and sprinkle with cheese. Fold to enclose filling and form a rectangle. Turn over. Lightly spray with oil, then bake for 25 minutes or until golden brown. Stand to cool for 10 minutes.
Step 4 Meanwhile, combine remaining onion and tomato, and lemon juice in a small bowl.
Step 5 Cut quesadilla into quarters, top with baby spinach and serve with salsa.
