Healthier Air-Fryer Fish & Chips



Friday nights, I have been loving a more layed back "fakeaway" styled dinner.

Homemade pizzas, burgers, etc so heres a delish fish and chips for you all in case you wish to join us this Friday on our fakeaway styled dinners hehe.


Ingredients

Serves 4

400g sweet potato, cut into 1cm-thick chips 1 tbs olive oil cooking spray 2 tbs plain flour 2 free range eggs, lightly beaten 1 cup packaged dried breadcrumbs 2 lemons, 1 zested, 1 cut into wedges 1/2 bunch continental parsley, leaves picked, finely chopped 400g firm white fish fillets, cut into 3cm-thick strips 350g pkt Woolworths kaleslaw kit 2 tbs healthier tartare sauce, to serve

Method

Step 1 of 4 Preheat air fryer to 200°C. Lightly spray potato with oil. Season with pepper. Place potato in air fryer basket and slide into air fryer. Cook for 12 minutes, shaking basket often, or until golden and cooked. Remove basket, transfer potato to a baking tray and cover with foil to keep warm.

Step 2 of 4 Meanwhile, place flour on a plate, place egg in a shallow bowl, and combine breadcrumbs, zest and parsley on a separate plate. Working with one piece of fish at a time, coat in flour, then dip in egg and coat in breadcrumb mixture. Repeat with remaining fish, flour, egg and breadcrumb mixture.

Step 3 of 4 Place fish, in a single layer, in air fryer basket. Spray with oil. Slide basket into air fryer. Cook for 12 minutes, turning fish halfway through cooking, or until golden and just cooked through.

Step 4 of 4 Meanwhile, make kaleslaw according to packet instructions. Serve fish with chips, kaleslaw, tartare sauce and lemon wedges.
