Healthier Cheat's Pork Ragu


Serves 4 Cooked in a juicy tomato-based sauce with cherry tomatoes, this 30-minute healthier pork ragu with rigatoni pasta will become your new go-to on busy weeknights.

Ingredients

250g rigatoni pasta 1 brown onion, finely chopped 500g lean pork mince 3 cloves garlic, crushed 1/4 bunch basil, leaves picked, stems finely chopped 2 tbs no-added-salt tomato paste 800g cherry tomatoes in juice 25g parmesan, finely grated 120g gourmet leaf mix 1 tbs extra virgin olive oil


Cook pasta in a large saucepan of boiling water according to packet instructions. Drain.

Meanwhile, heat oil in a large, deep frying pan over high heat. Add onion. Cook, stirring, for 4 minutes or until softened. Add mince. Cook, breaking up lumps with a wooden spoon, for 6 minutes or until well browned. Add garlic and basil stems. Cook, stirring, for 1 minute or until fragrant.

Stir in tomato paste. Add canned tomatoes and stir to combine. Cook, stirring occasionally, for 10 minutes or until mixture has thickened slightly.

Add pasta to pan, then cook, tossing, for 2 minutes or until heated through. Season with pepper. Sprinkle ragu with basil leaves and parmesan. Serve with salad leaves.
