Healthier Garlic Beef & Greens Stir-fry


Ingredients

Serves 4

450g microwave brown rice (or make your own fresh) 4 cloves garlic, thinly sliced 500g extra lean beef mince 2 tsp honey 1/4 cup salt-reduced soy sauce 4 spring onions, trimmed, thinly sliced 250g green beans, halved diagonally 1 bunch baby choy sum, trimmed, cut into 6cm lengths 1 long red chilli, thinly sliced 1/4 bunch coriander, leaves picked 1 tbs extra virgin olive oil


Step 1 Heat rice according to packet instructions. Meanwhile, heat oil in a large frying pan or wok over medium-high heat. Add garlic and cook, stirring for 1 minute or until just golden. Using a slotted spoon, transfer to a plate lined with paper towel to drain.

Step 2 Return pan to heat. Add mince. Cook, breaking up lumps with a spoon for 5 minutes or until meat is browned. Add soy sauce, honey and 3/4 of the onion. Cook, stirring for 4 minutes or until mince is well browned.

Step 3 Transfer mince to a bowl. Add rice. Stir to combine. Cover bowl to keep warm.

Step 4 Add beans and choy sum to pan. Cook for 2 minutes or until bright green and tender. Push greens to one side of pan. Add mince mixture to the other side of the pan to reheat. Sprinkle all with garlic, chilli, coriander and remaining onion. Combine to serve.
