Homemade granola with cinnamon & honey




PREP 15 mins + cooling COOK 55 mins MAKES 8 cups


INGREDIENTS:

5 cups traditional rolled oats 1 cup Macro Organic coconut flakes

1 cups mix of raw almond kernels, cashews and walnuts 2 tbs mix of sunflower seeds and pepitas 1 tsp ground cinnamon 1/2 tsp sea salt flakes 1/2 cup honey, plus extra to serve 1/3 cup organic virgin coconut oil 1 tsp vanilla essence 1/4 cup Woolworths dried cranberries

1/4 cup chopped dried apricots


METHOD:

1 Preheat oven to 150°C/130°C fan-forced. Line 2 large baking trays with baking paper. Combine oats, coconut, nuts, seeds, cinnamon and salt flakes in a large bowl. Combine honey, oil and vanilla in a small bowl, then add to oat mixture and stir until well combined. 2 Divide oat mixture between trays and spread out evenly. Bake for 55 minutes, stirring every 15 minutes, or until golden. Remove trays from oven and allow to cool completely. 3 Add cranberries and apricots to mixture, then stir to combine. Serve.
